English Muffins


English muffins are best sliced in half, toasted and eaten with jam.. For the boys though, they prefer an Egg McMuffin like Macca.. Complete with cheese and a dollop of chilli sauce. 


225ml warm milk
2 teaspoon instant dry yeast
1 teaspoon sugar

Mix and set aside for 5 minutes until frothy .

450g flour
1 tsp salt 
50g shortening
55ml warm water

Cornmeal or polenta

Mix and knead all the ingredients in a large bowl or use a mixer with dough hook for about 3 minutes. If you are kneading by hand, knead for 10 minutes until dough is smooth 
Cover and set aside for an hour until it doubles in size.
As you can see, it doubles up.
Flip your dough on a floured surface. Roll your dough into 1/2 inch thickness and use a round cutter to shape your muffins.

Sprinkle some cornmeal on parchment paper and place the cut dough. Sprinkled more cornmeal on top.

Let the dough rest for 30 minutes.
Heat a flat griddle and grill your muffins on low heat for 2 minutes on each side until golden brown. Once all the muffins are griddled, pop it in the oven for 10 minutes on 160 degrees heat. This helps to "lift" the muffins . Remove from heat and enjoy!
