I've been craving for anything pumpkins lately and I bought 2 kinds last weekend . I love sliced pumpkin baked in the oven with sprinkling of salt but today I decided I want something Melayu... So made these with the Labu Sony (no idea what it's called in English!)
Another dump all in a blender cake. Or you can just whisk all the items in a bowl. Add the pumpkin last.
1 egg
1/2 cup flour
1/4 cup -1/2 cup sugar (depending on the sweetness of the pumpkin)
1/2 tsp vanilla extract
1/2 cup santan
1/4 cup water
A pinch of salt
1 tablespoon melted butter or canola oil
1/2 cup boiled, mashed pumpkins
Sesame seeds
Boiled pumpkin, strained and mashed.
Grease the mould with oil.
Pour batter into the mould and sprinkle with sesame seeds.
Baked in 200 degrees oven for 30 minutes or until set. Cool and slice.
1 comment:
Can I use canned pumpkin puree instead?
Thanks.
